Ex-Forty One restaurant chef Dietmar Sawyere has opened his second Ad Lib Bistro in Sydney. Hot on the heels of the Pymble locationâ€™s success, the new sister restaurant in Double Bay is yet again set to bring quality French bistro fare to Sydneyâ€™s suburbs.
Swiss-born Dietmar Sawyere is a quality-driven chef, passionate about the superiority and diversity of Australian produce and often working alongside growers. Sawyere oversees a menu of French bistro fare with contemporary twists, starting with hors d'?uvre classiques including duck liver parfait with onion marmalade and pigâ€™s trotter, ear and tail croquettes. Mains take the form of delicate roast duck leg confit with walnut polenta and balsamic grilled figs, while desserts includes classics like thin apple tart with vanilla ice cream and sauternes custard. In true French style, wine can be ordered in 150ml, 250ml, 500ml serves, as well as by the bottle. There is an excellent selection of classic cocktails, beers and aperitifs.
