A little bit about us....
Agave opened its doors to Crown Street in mid 2009 and has already become a stalwart with Sydney-siders in the know. Skipping the Americanized dishes that have unfortunately come to typify Mexican food in Sydney, Agave instead offers diners a genuine taste of Mexico.
The Mestizo gastronomic influence can clearly be seen in dishes such as mole, due to the fact that it combines a mixture of chillis, chocolate and tomato - of Mexican origin - with almonds, raisins and garlic - brought by the Spaniards and those of Arabic descent - as well as with pepper, cinnamon and clove - spices from the Orient.
The diversity of products from each origin, the indigenous tradition, and the European influence turned Mexican cuisine into a complete experience that does not cease to amaze.
Dishes like the Pulpos al Ajillo, pan fried octopus with garlic, onion and guajillo chilli, and the pork blade and nopales cactus cooked in a tomatillo salsa, mark Sydneys first true foray into the little-known territory of authentic Mexican cuisine.
Gerardo J Macip-Lanzagorta, the restaurant owner, continually consults his mother Maria in mexico for family recipes and advice. Her authentic influence is clear in dishes like the very warm Camarones a la Diabla, Seared king prawns with garlic, chipotle and arbol chilli served with succulent red rice.
Naturally, Agave offers an extensive range of sipping tequilas, and they are all 100 percent agave of course. The 3 shot special, the Mexican flag, is also a crowd favourite. a shot of lime juice is followed by a shot of tequila to make up the green and white stripes, and finished up with a dash of red sangrita to complete the flag.
