Jazz City Diner first opened its doors in the Sydney suburb of Darlinghurst in December 2010. It is a small 24 seat diner specialising in New Orleans inspired modern American cuisine. The diner pays homage to American diner history, drawing on 1930s art deco influences and a jazz theme. These elements are exemplified in the menu, service, restaurant layout, fixtures and uniforms.

Jazz City diner is owned and operated by Chef Dan McGuirt, who has over 15 years of experience in the food industry. Dan has operated his own restaurant in the past and has had the opportunity to work with several of the top chefs in Australia. He is classically trained in French cooking and is a graduate of Le Cordon Bleu in Sydney. He has also worked in Italian and modern Australian restaurants. Yet it is his time spent at Vue de Monde in Melbourne, when it was rated by Gourmet Travellers Magazine as the top restaurant in Australia, that Dan feels has had the greatest influence on his culinary style. Dan says, “I wanted to cook American food but with a modern approach. My time at Vue de Monde with chefs Shannon Bennett, Ryan Clift and the rest of the kitchen brigade has opened my eyes to modern cooking techniques and methods. I have enjoyed applying those techniques and methods to the cuisine I grew up eating.”

As a new restaurant, Jazz City Diner aims to consistently delight its clientele with deliciously different meals – whether innovative new dishes, classic diner meals, New Orleans favourites, or any combination of these – and warm, welcoming, attentive service. Jazz City Diner staff are proud of our cuisine, and we have an open kitchen and traditional diner stools at the counter so our guests can see the care we take with each dish.

Initially we wanted to be a diner restaurant specialising in ultra-modern American cuisine. Customer response has dictated that we now offer more comfort, traditional American cuisine. We sell tons of burgers, milkshakes and pies, especially our favourite, banana cream pie.

We are small, only seat 24 and have limited trading hours.
